The long awaited replacement for Knox’s Irish pub is set to open its doors, with a $5 million brewery set to bring back live music and a dancefloor to the area.

Urban Alley Brewery will open in Knox Ozone on May 12, filling the space left by Seamus O’Toole’s Irish Pub, which closed for good in 2020.

The independent brewery opened its first venue at The District Docklands in 2018.

The Knox venue includes a multi-level indoor and outdoor dining precinct, complete with a dedicated gin distillery by Tasmanian-born gin producers Dasher + Fisher.

The 1000sq m venue is set to offer regular entertainment, including live music with 3am trading, trivia and a classic pub menu with a modern twist.

Licensed for 750 people, the venue will also provide punters with a first-hand look at the brewing process, with fermentation tanks forming the backdrop to the rustic bar, as well as

an on-display gin distillery.

Entertainment will include a live band on Friday nights followed by a DJ until

3am, DJ’s Saturday and Monday nights, as well as chill-out acoustic sets on Sunday afternoons.

The venue will also offer drink specials on Monday uni nights.

It’s not the only new venue on the way for Knox Ozone, with TGI Friday's set to fill the space left by Paesano Italian restaurant.

It comes as Westfield Knox undergoes massive renovations with work on a $355 million upgrade, including a new Aldi and Woolworths, well underway.

Urban Alley chief executive and co-founder Dean Grant said he was excited to open the “incredible” new venue.

“We’ve spent over $5 million dollars so it’s a complete refurb – double the size of the Irish pub; we took the shop next door and doubled the size,” he said.

“To have the Dasher + Fisher gin partnership is very cool; we’ll have some beautiful gins to go along with the fresh beer.”

Mr Grant said he hoped the venue would fill the void left by the closure of the hugely popular Irish pub.

“I know that people in the area are really looking forward to seeing something else open there and I’m just so proud of the venue – it looks incredible.”

Mr Grant said he expected the venue to cater to people of all ages, from those looking to enjoy lunch or dinner, to the younger crowd looking to enjoy late night entertainment.

The venue has also created 49 new jobs.

To celebrate the new Knox location, Urban Alley is honouring the precinct with a specialty-brewed Ozone Pacific Ale.

The brewery will be open seven days a week, from midday until 1am Sunday to Thursday and 3am on Friday and Saturdays.
