That’s Amore Cheese transfers talent to cannoli and gelato making

They have been serving up mouth-watering, award-winning cheeses for years. Now Thomastown’s That’s Amore Cheese are bringing their magic to cannoli and gelato, including a cannoli cake you need to try.

When That’s Amore Cheese owner Giorgio Linguanti moved to Australia in 2004 he had never made cheese before, let alone award-winning vintages.

With a background in advertising, but limited English, the Sicilian native found himself working in a cheese factory.

“I was asking my boss every day ‘why does the cheese smell different?, why does the curd look different?’, Mr Linguanti said.

“His answer was always ‘why do you want to know’.”

Soon Mr Linguanti’s passion for good cheese extended to him making cheese from a garage in Epping in 2005.

Three years later, That’s Amore Cheese bloomed to a team of six using 250 litres of milk a day.

The company’s first product, Bocconcini Leaf — a cow milk mozzarella shaped while hot into a 5mm sheet — was a hit with Melbourne restaurants which enabled the company to start making Burrata and Smoked Scamorza, he said.

Now it uses 30,000 litres of milk a day across more than 40 varieties and export products to 10 countries.

Mr Linguanti said the Thomastown business’ success had been bolstered by a string of wins at the Australian Dairy Awards.

Since 2011 That’s Amore Cheese have won 11 gold medals and 12 silver medals at the awards.

“The awards don’t just recognise the quality, they help to guide the customer,” Mr Linguanti said.

Now the company has established two sister brands Cannoleria by That’s Amore and That’s Amore Gelato.

“We are making cannoli and gelato in a very artesanal way,” he said.

Cannoleria by That’s Amore’s include a decadent two flavour cannoli cake, while gelato lovers can devour flavours including Mascarpone and Nutella, Lemon Cheesecake and Mint Choc Chip.

That’s Amore Cheese will join a smorgasbord of other Thomastown producers at the Taste of Thomo food festival on September 7 at 52 Main St, Thomastown from 10am to 1pm.
