Fresh twists on classic Indian

Castle Taj Indian Restaurant has released its first new menu in two years.

Castle Taj Indian Restaurant has released its first new menu in two years, offering new and exciting reasons to visit the long-running Castle Hill favourite.

Castle Taj has served Hills locals for 25 years, with current owners Sumit and Sonia Prasad taking over in 2012.

Sumit, who is also the head chef, uses traditional methods to slow-cook the authentic curries and grilled meats from scratch.

New flavours like mint tandoor bread ($4.90) and the seafood-based Samundar Ka Khazana ($24.90) - which translates to ‘treasure of the ocean’ - offer diners something different while favourites such as butter chicken ($19.90) and succulent tandoori lamb cutlets ($20.90) will satisfy fans of traditional Indian.

For dessert, the Paan Kulfi is a modern twist on a traditional Indian after-meal digestive using betel leaf blended with homemade Indian ice cream ($7.90).

Or try the fried cottage cheese dumplings served with rose petal infused syrup ($7.90).

Meanwhile, little fans will love the restaurant’s new children’s sized butter chicken.
