Anzac Day is just around the corner, which means one of Australia's tastiest treats is too.

Anzac Cookies

Ingredients
- 1 cup rolled oats (or quinoa flakes)
- 1/2 cup wholemeal spelt flour
- 2/3 cup desiccated coconut
- 1/2 cup flaked almonds
- 1/2 teaspoon baking powder (or gluten-free baking powder)
- 1/2 teaspoon ground cinnamon
- 3 tablespoons melted butter
- 3 tablespoons raw honey
- 3 tablespoons warm water
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Method
- Preheat oven to 160°C and line a baking tray with baking paper.
- In one large bowl add oats, flour, coconut, almonds, baking powder, salt and cinnamon and mix until well combined.
- In a second bowl, add butter, honey, water and vanilla, and mix until well combined.
- Make a well in the dry ingredients and add in the wet. Stir until combined.
- Roll a tablespoon of the dough into a ball, place it on a lined baking tray and flatten it out with the palm of your hand into a circle. Repeat with the remaining dough, leaving 3 cm between each cookie. Bake for 15 minutes until golden brown.
- Allow to cool on the baking tray before removing. Cookies store for 2 weeks in an air-tight container.
