AFTER a childhood working in his father’s busy chicken shop, co-owner Dean Papas ventured out into the corporate world. It wasn’t long before he realised he missed the satisfaction that comes from a hard day’s work but leaving it behind after locking up for the night

Now he’s opened his own place with the mantra of “Whatever it is, do it well” which he has applied to every facet of this eatery, from the stacked burgers, salads and a real favourite, the House Plank, the chef’s daily pick of three nibbles — and if by nibble you mean slow roasted lamb ribs, southern fried wings or popcorn chicken. DECADENT Nutella milkshakes served in mason jars made them popular but once Aki Daikos and his business partner Simon Kappatos put a Nutella filled doughnut on top, skewering it with a straw to drink up the chocolate concoction, they became a global Instagram sensation overnight. With near cult status, they could have set up their flagship dessert bar anywhere in the world, but instead they opted to bring it back to their old childhood home. TAKING a lead from their son’s interest in street art, X opted to open a café that would not only recognise, celebrate and support the local talent, but would reflect the diversity of the community itself. The meat on the menu is from the adjacent butcher, Dulwich Hill Gourmet Meats. It also features in their pulled beef sandwich and meat pies, some of which are made with beer from one of Sydney’s many craft brewers, most recently St Peter’s Willie the Boatman. They also have a strong vegan following using stock from their neighbouring produce market. But just as their son inspired their café, the tables have turned and he’s now pursuing work a career as a chef. — 495 Marrickville Rd

THEY’D talked about it for a few years so when Josh McPhee and his friend David Moran finally made the leap, leaving their jobs as chefs to open a the place together, the next big decision was what to serve. Both shared a love for BBQ so, with a little persuasion, Josh was able to convince his grandmother into sharing her recipe. Sticking with the southern US concept, they named their place The General after an old American Civil War train. Their burgers are delicious, particularly with their Coney Island sauce, which you can buy by the jar. — 514 Marrickville Rd
