ASK locals what’s good on the menu and you’re likely to hear “anything with barramundi” which means that owner Ted Heng’s vision is working. Since taking over the restaurant four years ago, he sought to add ingredients, particularly warm-water fish from his native Malaysia.

Seasonings, however, can vary as Ted notes that the cuisine is influenced by many other cultures, including India and China. While the food alone is worth the visit, he’s also keen to share the traditions behind the dishes, including the Big Bowl, a Chinese New Year dish made with eight — a lucky number in China — ingredients including prawns, duck and chicken. — 111 Longueville Rd

THE lovely cakes and pastries that fill the windows, as well as the special order wedding cakes, speak of skilled hands with a delicate touch. Not exactly what you’d expect from a guy sporting tattoos, a ponytail and a baseball cap.

But clearly, owner and baker Sam Campisi likes that contrast and seeing that he easily sells 300 large cakes daily, his customers do too. Favourites include the profiterole cake and berry tarts.

LIVING above their parents’ bakery with the family working through the wee hours of the night, it wasn’t uncommon to see young Aimy Hoang and her brother Ian Tran asleep on soft sacks of flour stacked in the back. But when awake, they would be learning as much as they could.

While baked goods are the backbone of the business, Aimy has subtly added a nod to those early morning with an all-day breakfast menu and the nostalgic flavours from her mother’s Vietnamese cooking with offerings such as a delicate pho soup and pork sandwiches on house-made baguettes. — 112 Longueville Rd

AFTER a trip to Japan to visit his wife’s family, owner Guangyi Lee began to take notice of the correlation between longevity and the consumption of fish. Taking this into consideration, he set out to provide an affordable option for the growing trend of healthier eating.

“Australia has the best fish in the world,” Lee says, and by using local, seasonal and just four types of fish (thus the name Fourth Fish) he is able to provide the best possible quality rather than spreading the menu too thin. “Simple is best,” he says, and in this case simple is also delicious. — 1/12-16 Burns Bay Rd
