Where you can watch soba noodles being made from scratch
While most restaurants simply use packet noodles, a new Brisbane eatery will be showcasing the culinary art of soba making, even milling the flour for the Japanese dish in-house.

A SPECIALIST Japanese restaurant where diners can watch soba noodles being made in front of their eyes from scratch is coming to Brisbane’s southside.
Soba Shimbashi will open this Tuesday at Pinelands Plaza shopping centre in Sunnybank Hills and is the work of Kazuhiro Uemura and his wife Keiko.
Having learnt the art of soba making in Melbourne from a Japanese master, the couple will prepare the popular noodles by hand each day in the restaurant from a blend of local wheat flour and Tasmanian buckwheat flour, which they will mill in-house. The noodles will then be served 11 different ways from the classic plain seiro style – cold with dipping broth – to warm in a soup with everything from tempura to slow-cooked duck.
The 36-seat, traditionally styled venue with natural timber tones, will also offer a variety of popular entrees, such as agedashi tofu, nasu dengaku and karaage, as well as sushi and sashimi.
And children won’t miss out with a special “kids’ set” featuring a variety of sushi, karaage and a drink.
