Social media’s favourite bakery, Brooki Bake House has officially announced the opening date for its second storefront, which will be at Brisbane’s Domestic Airport, but customers may have to be quick to get in.

Owner Brooke Bellamy took to Instagram on Tuesday to reveal that the highly anticipated new opening would be a four-month pop-up venue over the summer, and the doors would fly open from 7am on Friday, September 20.

Bellamy clarified to the Courier-Mail that the new venue would be a pop-up until Valentine’s Day, but that if the new venue was a success, it would stay on at the airport going forward.

She shared photos also showing her and husband, Justice, finishing up the fit-out of the space, just one week before Baby Brooki’s due date.

“Very crazy, so we open on Friday here at Brisbane Airport, and my baby due date is the following Friday so I’m just hoping that nothing happens out of line, but if it does, we’ll cross that bridge when we come to it,” she said.

“But yes, baby on the way, opening our second store and also my cookbook is four weeks away as well, so it’s a very big year.”

The new storefront will sell all the bakery’s signature goodies, from cookies and brownies to cupcakes, along with a line of exclusive Brooki merchandise, which Bellamy said would be a great accompaniment to her cookbook once it is released next month.

“We sell a lot of merch because people love the brand and then want to bake from home, which is perfectly timed with the cookbook coming out,” she said.

Toby Innes, Head of Commercial Property Development at Brisbane Airport said that the transport hub was delighted to have Brooki join their retail space.

“We know there’ll be kilograms of Brooki products boarding flights to the dozens of places across Australia and the world and it is another case of our airport proudly showcasing the best of what Queensland has to offer,” he said.
