Second Brooki Bakehouse store location revealed ahead of September opening

It’s been the subject of much excitement and speculation on social media, but the location of Brooki Bakehouse’s second Brisbane location can finally be revealed, set to open in a matter of days.

Social media cookie sensation Brooki Bakehouse has finally revealed the long-awaited destination of its newest store, following the runaway success of the Fortitude Valley flagship venue.

Posting to Instagram Stories on Wednesday, Brooke Bellamy, owner of Brooki Bakehouse teased fans with a series of shots of the team rolling their signature shade of pink paint into the new location, followed by a snap of cookie boxes strapped into plane seats, and a prompt to guess the new location.

The new opening has been the subject of much speculation, with fans across the nation (and world) hoping their city would be next for Bellamy’s signature chunky cookies.

But the Courier-Mail can reveal that the newest location will be right here in Brisbane, opening later this month at Brisbane Airport’s Domestic Terminal, right outside Gate 25.

Ms Bellamy said the transport hub was the “obvious choice” as it offered potential to reach interstate customers as well as locals.

“We have our amazing loyal local customers, but we have so many people come in and tell us that they are taking the cookies to somewhere else in Australia,” she said.

“They are taking a little piece of Brisbane with them.

“Now we can give them that, whether they are visiting Brisbane but can’t get into the city, or whether they are from Brisbane and want to take them to give to someone somewhere else, now they can.”

Ms Bellamy said the store did not have a confirmed opening date, thanks to the challenges that come with opening a store on Crown land, but that it would be open this month.

“We will be open before school holidays, because so many people come here to visit Brisbane or Noosa or the Gold Coast, and so many of them come through the airport,” she said.

Fans outside Brisbane shouldn’t be discouraged, though, with Bellamy confirming there were some very exciting plans in the pipeline.

The new store opening comes as part of a bumper month for the Brisbane entrepreneur, as she patiently, but uncomfortably awaits the very near arrival of her baby girl and the upcoming release of her cookbook.
