Brisbane’s Brooki Bakehouse reveals ‘dream’ collab ahead of baby girl’s arrival

Viral cookie sensation Brooke Bellamy has had a whirlwind year on the personal front, and it just got bigger and better.

She is the genius behind viral Brisbane cookie sensation Brooki Bakehouse, but for now Brooke Bellamy is stepping out of the kitchen into her newest and most exciting challenge yet.

In just a few short weeks, Bellamy’s sweetest creation, affectionately nicknamed Baby Brooki, is set to arrive and the mother-to-be couldn’t be more excited, revealing she is expecting a baby girl.

“Everything Brooki is pink and Baby Brooki will be pink too,” she revealed.

“As soon as I found out it was a girl I just thought ‘oh, its my best friend’. I always dreamt of having a little girl … it was my mum who first taught me how to bake and she is truly my best friend, so I am so excited to have that with my daughter, too.”

Fans of her mouth-watering cookie creations shouldn’t fear though. Bellamy seems as prepared, and driven, to take on the challenge of balancing motherhood and her ever-expanding business as she is for everything she does, along with the help of new husband, Justice Bellamy.

“My husband joined the company in January and he will take over the operations while I am out. It’s great when it’s someone who knows you 100 per cent and understands you and your vision 100 per cent,” she said.

The couple married in an intimate ceremony at Brisbane’s Kangaroo Point rotunda late last month, joined by just 11 of their nearest and dearest and followed with celebratory lunch at Rosmarino, one of Brooki Bakehouses' neighbouring restaurants.

“I love attending a big wedding when it is someone else planning it, but I am not the girl for that,” she said.

It is hard to imagine where she would have even found the time to plan a big event when you consider the huge year Bellamy has had so far.

Her cookbook, out October 29, is already charting internationally and Bellamy has just launched her ‘dream’ collaboration, which will see her cookies sold in brick and mortar stores across the country.

Nespresso reached out for a small collab last year, after seeing her ‘day-in-the-life’ videos that bought her TikTok fame, where excessive coffee consumption was part of her brand, and after great success offered a once-in-a-lifetime opportunity for the small business owner.

Bellamy has created a limited edition Double Choc Salted Caramel cookie, created to pair perfectly with Nespresso coffee, which will be sold in Nespresso stores nationwide, giving fans a chance to get their hands on Brooki cookies, without the 45-minute queues the Fortitude Valley store often sports.

“It was a running joke that I was having eight or nine coffees a day … I think anyone who works in hospitality lives on coffee. I obviously am not drinking that now, but I wouldn’t be here without my one coffee a day,” she said.

“As a small-business owner (this collaboration) is the dream, to partner with such a well-established company and to tap into their customers and for them to tap into mine … without the risk of signing a lease or having a pop-up.”

Bellamy now plans to start slowing down to prepare for her new arrival, cutting down her 12 hour days, before taking maternity leave for a few months, where she hopes to continue creating videos on baking tips and tricks to accompany her cookbook, from the comfort of her home kitchen.
