New Farm breakfast institution Pablo set to return

Most people thought this inner-north breakfast cafe was dead and buried when its owners sold up in 2016, but they are back and set to open a refreshed eatery under the same name just an egg flip away from their old digs.

NEW Farm breakfast ­institution Pablo is moving back to the neighbourhood after a three-year hiatus.

Amy and Mike Bateshave taken over the former Ginger & Rose site on the corner of Merthyr Rd and James St and will open a fresh version of their original cafe, which they sold in 2016, that was just an egg flip away in nearby Brunswick St.

The new 65-seater offers far more space than their first site, and will boast footpath dining, as well as a beautiful tropical courtyard out the back they hope to later use for events.

Inside the dining room is being transformed with shades of olive green and timber, with a lounge area and communal table.

The couple has also commissioned local graffiti artist Emmanuel Moore to create two ­murals for the eatery based on New Farm Park featuring the likes of ­wattle and jacaranda trees.

“We’ve got the space to make it feel really homely,” says Amy. “It will feel like a home away from home.”

Genovese coffee will be on pour, while chef Mike will create a multicultural all-day breakfast menu, with particular influence from Thailand.

Pablo’s former favourites will be back on the menu, with ­perhaps a fresh twist, such as the avo on toast given a Turkish vibe with a tahini-infused coconut yoghurt and pomegranate.

“It will be pretty inventive and there’ll be lots of gluten-free and dairy free dishes,” says Amy.

The duo also hopes to have a liquor license by the end of the year so they can serve the likes of bloody Marys and mimosas at brunch, and local Brisbane beers alongside their lunch menu. Pablo is set to open October 8.
