Brisbane’s new flame-fuelled restaurant with secret whisky vault
The dining scene in Brisbane’s bayside is set to fire up with the launch of a new restaurant dedicated to cooking over flames and delivering whiskies from around the world.

Sparks are set to fly next month when new fire-powered restaurant The Arsonist ignites in Brisbane’s bayside.
The 80-seat casual fine diner will open to the public from June 1 along the Esplanade at Manly, cooking everything over flame.
“We’ve got our big fire pit and custom smoker in there and we’re going to have a lot of fun,” said former Sirromet Lurleen’s chef turned executive chef Mathew Fulford, who will be kicking the venue off alongside head chef Kyle Bradley.
The restaurant will offer breakfast, lunch, dinner and a feasting menu, with a focus on the best of local produce from Stockyard OP beef dry-aged in house to slow-cooked organic lamb.
Embracing techniques such as grilling, smoking or slow cooking, the kitchen will turn out the likes of smoked beef fat doughnuts with davidson plum, wood-fired figs with stracciatella, prune and honey, fire-roasted butternut pumpkin, even lamb and smoked tongue skewers.
Desserts won’t escape the coals either, as elements such as smoked blackberry ice cream and toasted s’mores hit the table.
An open kitchen will allow diners to watch all the fiery action, while there’ll also be two exclusive “chef’s tables” for up to eight guests for those who want a more personal experience.
But it’s not just the fire that will draw customers in. The Arsonist will feature a bar with individual lockable vaults where whisky enthusiasts can buy a bottle of the spirit and store it for their next visit.
In fact, they can expect whisky from all corners of the world, including Scotland, Ireland, Japan, America and Australia, in a generous five page menu, alongside a signature smoked gin blended exclusively for the venue.
“There’s a tight wine list and a nice little whisky offering so it’s all the things that we love so I think it’ll be great,” said Mr Fulford.
The restaurant will be a more up-market sister to Manly’s Tide on the Jetty from owners The Consortium Queensland, with the group planning more eateries in the bayside soon.
