Fire-powered restaurant to open in Brisbane’s bayside
An up-market restaurant cooking food over fire is set to open in Manly with one of Queensland’s top chefs at the helm

HOLY smokes, Brisbane’s bayside is set to get lit with a new up-market, fire-powered restaurant.
The playfully named The Arsonist will move into the Little & Oliver’s cafe space along the Esplanade in Manly, offering a gourmet dining experience built around cooking over flames.

The new venue is the work of hospitality group The Consortium Queensland, behind fellow Manly eatery Tide on the Jetty, and renowned former Sirromet Winery chef Mat Fulford.
“What we’re trying to bring is [the type of restaurant] you would normally find in the inner city or surrounding suburbs out to Manly,” Mr Fulford said.
“The area itself doesn’t have anything of that level and … I love that style of cooking – always have. I love its purity. For me it’s about as good as it gets.”
The tenancy will undergo a glamorous refurb, installing a new bar area, dry ageing meat cabinets and a wall of safes filled with whisky, by which customers can buy a bottle, store it in the safe and drink it whenever they visit.
A custom-built wood-fired oven and grill will also be installed, allowing the kitchen team, run by Mr Fulford, to create flame-licked and smoky delights, such as lamb shoulder, whole John Dory, roasted bone marrow and whole suckling pig.
The menu will be share-style with quality beef coming from Stockyard, including a bistecca which will be dry aged. And for cured meat fans, the restaurant will also offer its own signature range of bespoke charcuterie using free-range pork.
“It’s that humble dining room where we cook great food, serve awesome wine and cocktails and I have a bit of fun with it,” Mr Fulford said.
The Arsonist will have seating for around 80, with a cool outdoor alleyway, and hopes to open just after Easter.
