Brisbane welcomes flashy new $3m waterfront seafood restaurant, Fosh at Hamilton
One of Brisbane’s most prolific restaurateurs will launch a glam new $3m eatery on the river’s edge, offering top-notch seafood caught within 24 hours.

Brisbane will welcome a flashy new $3m waterfront seafood restaurant this week with the opening of Fosh in Hamilton.
Taking a prime riverfront location in the under-redevelopment Portside complex, the eatery will offer an up-market dining experience alongside a more casual fish and chip takeaway.
The new venture is the work of renowned restaurateur Michael Tassis (behind eateries such as Brisbane CBD’s Opa Bar + Mezze and Massimo Restaurant & Bar, plus Yamas Greek + Drink in West End.
The sprawling 700sq m Hamptons-inspired Fosh will offer indoor and outdoor dining right on the river’s edge serving up everything from the world’s best caviar to fresh lobster, whole fish and champagne. Meanwhile the takeaway, Foshtails, will dish up great fish and chips designed for family and friends on the go.
“My favourite thing about Fosh is our ability to bring in the best products on the market thanks to trusted suppliers whom I’ve worked with and been friends with for over 25 years,” Mr Tassis said.
That means seafood that is sustainably caught and then on your plate within 24 hours.
“Spending my childhood working in my father’s restaurant, George’s Paragon Seafood
Restaurant in Sanctuary Cove on the Gold Coast, has given me a great appreciation and
love for seafood, one that I’m eager to ignite in others with Fosh,” Mr Tassis said.
The restaurant will open to the public this Thursday, joining a host of new food establishments at Portside including coveted patisserie Rise Bakery and popular ice cream store Rose Gelato.
