Celebrity chef Shane Delia reveals new restaurant plans at trendy West End arts hub

A bustling inner-Brisbane performing arts hub is to become home to a restaurant helmed by a Melbourne celebrity chef.

Brisbane’s dining scene just keeps going from strength to strength, with yet another big-name chef announcing they are bringing a new signature restaurant to the city, this time in a new bustling arts hub in West End.

Restaurateur, chef and TV personality Shane Delia, known for his Melbourne restaurants Maha, Maha East and Maha North, as well as the TV host of Spice Journey and Middle East Feast, has revealed he will be opening a signature restaurant at the Queensland Ballet’s Thomas Dixon Centre in 2025.

While details on the restaurant itself are still vague, Mr Delia said the venue will feature an evolving menu that will take guests on an “unrestricted spice journey”.

“Creating a signature restaurant at the Thomas Dixon Centre is an incredible opportunity,” said Delia.

“I look forward to bringing my passion for bold flavours, rich spices, and diverse culinary traditions to Brisbane, crafting an experience that complements Queensland Ballet’s artistic excellence.”

The centre, in partnership with VenuesLive (QLD Ballet’s hospitality partner) and Delia Group, is set become a must-visit dining and entertainment destination, offering some of the city’s finest arts, culture and dining experiences, and Queensland Ballet chair Brett Clark said they hoped to become unforgettable.

“Shane Delia’s culinary vision will help us realise our goal of making the Thomas Dixon Centre a cultural, lifestyle, and foodie destination. It’s about creating memorable experiences that bring people together,” he said.

A vibrant cafe, the Bunker Barre and Cafe is also set to transform the Old Bunker, with fit-out commencing in the coming weeks, which promises to honour the heritage of the space, while offering a casual yet elevated dining option.

The Thomas Dixon Centre features a 350-seat theatre, studios and function spaces, including a rooftop terrace.
