Brooki Bake House reveals first international store and best-selling cookbook
Brisbane’s favourite baker Brooke Bellamy has unveiled her first international Brooki Bake House store in the most unlikely of locations.

Its been a hectic few weeks, nay months, for beloved Brisbane baker Brooke Bellamy.
The Queensland baker has an instant best-selling cookbook release with signings across the country, all shortly after the opening of her second store and the birth of her daughter.
But now the new mum has exclusively revealed the location of Brooki Bake House’s first international store.
Following the wild success of the Fortitude Valley flagship, and the Brisbane Domestic Airport store, which is seeing double the sales of the flagship, Brooki is jetting off to the shores of Abu Dhabi for the month of December, as part of a local festival.
The Mother of the Nation (MOTN) festival is Abu Dhabi’s annual family festival held along The Corniche in the city’s east, will be Brooki’s first physical location outside of Australia’s borders.
Bellamy says the brand has received a massive amount of support from the Middle East, with talks underway for franchising opportunities, and that she is excited to see the support the pop-up will receive.
“It’s all pretty nuts, but with such an incredible team, everything feels really doable, I just step in to solve problems,” Bellamy said.
She, her husband Justice, baby Collette and Bellamy’s mum will head to the opening of the pop-up, to greet eager fans and help support staff on the ground in the early days.
Bellamy also revealed that they are in the process of finding the location for Brooki Bake House’s next permanent store fronts, and that they hoped to stay on at the domestic airport after their pop-up period ends in February.
Earlier this month Bellamy released her first cookbook, Bake with Brooki, which has given amateur bakers across the globe, the opportunity to bake cookies, slices, brownies and cakes straight from the bakery kitchen, which skyrocketed to number one on the charts within the first days of its release.
Bellamy said she knew she had amazing support in Brisbane, but still found it surreal that there was such a demand for her treats and her recipes across the country and across the globe, with her cookbook ranked top among legends like RecipeTin Eats founder Nagi Maehashi.
“It felt so great to debut up there with someone like her (Nagi), how cool that the two people topping the charts are self-taught women,” Bellamy said.
“We live in an age where you can teach yourself stuff online, so its cool to see that we did that.”
Within hours of the books official release, fans flocked to social media to share their journey to creating some of the viral treats, and Bellamy was surprised to find out the favourites.
“It was really surprising to me, the most popular thing has been the almond croissant cookie, which I made because I LOVE almond croissants and it was perfect first go, and so many people just made it straight away,” she said.
“Other things that have been really popular first makes have been the NYC cookie, the Biscoff and Red Velvet cookies as well as the Very Best Brownies and the vegan Peanut Butter Slice.”
“People keep saying ‘I love the slices, they are so retro’, we made them all the time in Tasmania, I grew up making them and if you went to someone's house they made a slice, so its been cool having people enjoy that.”
Bellamy is also set to announce further dates for her book tour in Perth, Adelaide, Hobart and Auckland, but has confirmed these will be in January next year.
She will be attending the TikTok awards later this month.
