The luxe CBD dining room that Bridge Room called home for eight years has sat empty since restaurateurs Ross and Sunny Lusted closed it in April 2019 to decamp to Woodcut at Crown.

Now the high-profile corner site on Bridge Street is set to finally be born again, with one of the hottest restaurant groups in town linked to it.

The crew from Bistrot 916 at Potts Point, and more recently Pellegrino 2000, have been spotted at the site in recent weeks by Quayside hospo operators and staff.

The agent is telling inquirers that it is no longer available, and the word is chef Dan Pepperell and partners Michael Clift and Andy Tyson have nabbed it. The restaurateurs couldn't immediately be reached for comment.

Word of a potential new restaurant from the trio first reached Good Food via New York City, where a research trip combed some the city's restaurants for inspiration. The hot take filtering back from the Big Apple is a grill could be headed Sydney's way.

Whatever their plans, they are unlikely to be boring. Bistrot 916 has cemented itself as a Potts Point staple, snaring a 15.5/20 from Terry Durack, who waxed lyrical about its ability to transport "you to your own fantasy of a Parisian bistro".

"Dan Pepperell was the subversive, award-winning chef behind Hubert and Alberto's Lounge; Andy Tyson the charming, Loire-loving head sommelier of the same Swillhouse Group; and chef Michael Clift, an eight-year graduate of the Rockpool school," Durack wrote.
