Melbourne's Savour school attempts world record with Avatar-inspired chocolate garden
Chocolate whiz Kirsten Tibballs is attempting to create a world record for the largest flower arrangement made from chocolate.
For the past nine months, Tibballs and the team from Brunswick's Savour Chocolate and Patisserie School have been working on more than 280 Avatar-inspired flowers, leaves and twigs using 300 kilograms of Callebaut chocolate in a Guinness World Record attempt.
The fragile pieces will be carefully transported to this year's Cake Bake & Sweets Show, where they will be completed and assembled into a dramatic seven-metre display.
For her record to stand, she must have an authorised weights and measures firm and an industry professional supervising and the entire process must be filmed.
But Tibballs doesn't regret undertaking the project. "When we do events like this, although we work ungodly hours it forces us to learn new techniques and new concepts and better ourselves as professionals."
Other highlights of the Cake Bake & Sweets Show, Australia's largest gathering of sweet tooths, include demonstrations by patissiere Adriano Zumbo and United States baker-to-the-stars Buddy Valastro, from TV's Cake Boss series; baking, chocolate and cake decorating classes; and a producers marketplace.
