In what is shaping up as a monster week for Malaysian food in Sydney, new venues devoted to the cuisine are opening from the north shore to the inner west.

Hun Loong, the former head chef at Mr. Wong in the city, will open Amah, in the District Dining precinct at Chatswood Interchange on June 12.

A co-production with Junda Khoo from the Ho Jiak group, Loong (who also worked at the hatted Quay restaurant) will mine the recipes of his late grandmother after being drawn to cooking her food again during last year's lockdown.

Over in Marrickville, Nanyang Malaya Cafe will also open later this week. Another co-production, this time from Billy Chong (Ipoh Town) and Kaisern Ching (Chefs Gallery), it slides into a new shopping space for Marrickville.

"It's in an old converted warehouse, with a crossover from Marrickville Metro. We play on [the setting] with graffiti art, but the interior has some British colonial touches, like bamboo blinds," Chong explains.

"Marrickville has a really strong breakfast and brunch trade, so we'll do our play on it. You'll be able to get a croissant with chilli crab, and there'll be a Malaysian burger with beef rendang in it."

Nanyang Malaya Cafe is the second venture from the duo: Chong and Ching also own Nanyang Tea Club at Market City in Haymarket. But where the Singapore influences usually win out at the Tea Club, Malaysia will be the champ in Marrickville.

Open Mon-Wed 10am-8pm and Thu-Sun 9am-9pm.
