Late-night Lebanese restaurant Zaffi opens on Little Hunter St in Sydney's CBD

Graeme Hunt has worked in the kitchens at Rosetta and Rockpool and is a former executive chef at Chin Chin Sydney, so it's fair to say he has a few cuisines under his professional belt. He's about to add another.

Zaffi, a 150-seat Lebanese restaurant with Hunt at the helm, opens on Wednesday, March 1, on Little Hunter Street in Sydney's CBD.

A sneak peek at Zaffi's opening menu reveals Hunt is pimping the cuisine with the deft modern touch of his previous haunts.

Raw kingfish is boosted with pomegranate, tomato and chives, split prawns dressed with garlic and aleppo pepper, and a tahini sesame cheesecake covered in crunchy kataifi pastry.

It's the latest venue from Chady Khouzame, the operator behind nightclub-restaurant-bar The Carter, so expect a side of party atmosphere with your fattoush.

"Zaffi means celebration in Arabic, so we wanted to create a space where people not only come to celebrate, but also where people know you're going to have a good time," says Khouzame.

The bar area is open until 3am.

Zaffi will also trot out organic halloumi and beef short ribs with pomegranate dressing.

Hunt tips the baklava vanilla soft-serve – with pistachio, walnuts and honey – as a budding signature dish.

Open Tue from 5pm; Wed-Thu noon-late; Fri noon-4am; Sat 5pm-4am.
