Chef Raymond Capaldi's Baketico expands, adding bakeries in Brunswick East and Brighton
Raymond Capaldi's Baketico is spreading its wings, adding a further two bakery-grocers in Brighton and Brunswick East to its existing locations in Heidelberg Heights, Westgarth and Port Melbourne.
Brunswick East will open first on October 28, taking over the site that was until last month Matt Wilkinson's Pie Shop. The store will offer bread, filled doughnuts and more, with Sophie O'Connor's Pandy Bakeshop dealing in vegan baked goods like fairy-bread lamingtons at the back. O'Connor opened the first Pandy inside Baketico's Westgarth shop earlier this year under mentorship from Capaldi, a classically trained chef.
Baketico will also offer take-home meals and Code Black coffee, and in coming months will add other food businesses to create a food hall-style space in line with plans Capaldi outlined when he bought the site.
Brighton will get its own piece of the pie when a standalone Baketico opens in the first week of November. Everything from savoury pastries such as cacio e pepe sausage rolls through to eclairs, cakes, bread, take-home meals and deli products will be up for grabs.
Both stores will open daily 7am-4pm.
