Vincent van Gogh was inspired by all the senses – although he might have valued hearing a little less – so why not design a cocktail list inspired by the famed painter?

Auvers has opened its doors at Darling Square, and co-owner Leo Rong says six van Gogh drinkables made the list.

One of them is inspired by van Gogh's painting Sunflowers, with Amero, pineapple juice and Campari.

Auvers' pretty dishes include a green moat around a coconut pandan polenta porridge, while snail, bonito, alfalfa, caviar and edamame squeeze into escargot on another dish.

The venue takes its name from Auvers, the village north-west of Paris where van Gogh lived and worked, but has a connection closer to home.

The original Auvers cafe is located in Sydney's Rhodes.

A 2018 Good Food review praised its photogenic food and pancakes made with meringue dough aerated by egg white.

"The batter comes out much lighter than regular pancakes," reviewer Candice Chung wrote.

"Soak each morsel on your plate in the glossy matcha glaze – it's vibrant and soul-reviving – the kind of art most of us can appreciate."

The pancakes are on the menu at Darling Square, alongside chorizo hash with kimchi mayo, a seafood spaghetti dish of sea urchin, scallop and salmon, and black sesame deep-fried ice-cream.
