Prawn wontons with spring onion, ginger and vinegar dressing recipe
Good quality wonton wrappers and super fresh Australian prawns, when boiled, transform into silky, mouth-watering, delectable, clean-tasting wontons. A version of this recipe, steamed prawn wontons with organic brown rice vinegar dressing, has been a staple on my Billy Kwong menu for the past 16 years, and at our large Kwong family gatherings.

All children love noodles and this is one of the many dishes you will find on my family table, especially during Chinese New Year celebrations – noodle dishes are symbolic during this festive period because the longer the noodle, the longer your life, apparently!

Stir-fried potato and kale with ginger
This Chinese peasant-style recipe is a delicious way to enjoy the humble potato within a shared-style meal. I cut the potato into slivers for quick cooking and because I enjoy eating delicate, piping-hot slivers of potato with my chopsticks. Texture is everything to the Chinese so I like the potato to still have a slight crunch to it. Add fresh or dried red chillies plus a sprinkle of Sichuan pepper to give a bit of kick.
