Chef on chef: Kylie Kwong interviews Josh Niland
Everyone loves a young chef with big dreams, huge drive and a small budget – including chef, restaurateur, Buddhist and market stall holder Kylie Kwong, owner of Billy Kwong in Potts Point. When asked which chef in all of Australia she would most like to interview for this inaugural Chef on Chef column, she chose 28-year-old Josh Niland of Sydney fish restaurant Saint Peter.
"He is an inspiration to me," she says. "He's intensely passionate about his craft, and has an extremely refined and defined aesthetic."
