t’s tough enough juggling school pickup and the nine-to-five when you’re a couple with two children and full-time jobs. Spare a thought then, for Australia’s seafood savants Josh and Julie Niland, who last month opened their eighth hospitality venue in seven years, despite parenting four children younger than 11. Catseye Pool Club, at The Sundays resort on Hamilton Island, is the couple’s second hotel restaurant far from home – and follows just months after their own accommodation debut, The Grand National in Paddington, Sydney.
