“We had to go big,” says Brent Savage of his move into the newly opened luxury hotel Capella Sydney. “As soon as we saw the soaring ceilings and heritage detail of the room, we knew we had to do a grand brasserie.”

The result is Brasserie 1930, a glorious, marble-clad ode to the grand dining rooms of yesteryear, housed within the golden sandstone of the former Department of Education building on Bridge Street, Sydney.
