It was 2017 and Kylie Kwong could feel something shifting. It had been three years since she had moved her beloved restaurant, Billy Kwong, to larger premises in Potts Point, and the high-profile chef had never been busier. Yet she felt increasingly restless.
“I would wake up in the middle of the night, tossing and turning,” she recalls. “That is not a usual thing for me.”
