The gang behind Porteño, Continental Deli and Bodega (RIP) know their meat, so when their bakery pulls together a schnitzel sandwich, it’s definitely worthy of attention. True to its name, Humble Bakery proves you don’t need a lot of ingredients to make something incredible: just a slab of juicy crumbed chicken, perfectly sized for the crusty, fresh-baked ciabatta roll, topped with Swiss cheese, nested with iceberg and dripping in the house “golf sauce”: an Argentinian dressing that combines mayo and ketchup with diced pickles and a hit of lemon juice. Must be hard to stay humble when you’re this delicious.

What once was an unremarkable watering hole on the corner of busy South Dowling and Cleveland streets has been reborn as a joyfully retro ode to the classic Aussie pub (without the pokies, thankfully). The menu adds to the throwback vibes, from the salt and pepper squid to the beer-battered fish and chips. But it’s the chicken schnitzel that’s the hero here: brined, crumbed in a mix of ancient grains like quinoa, then fried until crisp. Sat on a heap of buttery mash and a generous pour of rich “KFC gravy”, it’s already being called one of the city’s
best schnitties.

Una’s schnitzel is more than a meal – it’s a Sydney rite of passage. Your choice of veal, chicken or pork schnitzel arrives crisp outside, tender within, draped over a bed of rosti. A ladle of hearty mushroom sauce brings the Austrian jägerschnitzel flavour, while a simple cabbage salad cuts through the carb party. The no-fuss, old-school European charm of Una’s only adds to the whole experience, and although there’s plenty on the menu to love, it’s the schnitzel that draws the crowds: it’s big, it’s satisfying and, after one bite, you’ll understand why it’s been a local legend since 1960.

A seat in the Saint Peter dining room is one of the hottest tickets in town, and while the fish-centric degustation is worth any wait, the venue’s front bar offers a casual, fun and walk-in friendly way to experience the restaurant’s pescetarian magic. Among the list of snacky seafood treats featured on the bar menu is the abalone schnitzel sandwich, a favourite from Josh Niland’s now-closed Petermen that features a crumbed disc of sustainably sourced Clarence Point abalone, a couple of pickles and a double-dose of yoghurt tartare, all sandwiched between two fluffy, crimp-cut circles of white bread.

What is it about Japan that manages to make things we already love – even the schnitzel – even more incredible?
This cool north-side newcomer celebrates all things tonkatsu, dishing out chicken, pork, wagyu and even prawn takes on the Japanese schnitzel. Get them donburi style (over rice, ladled with house-made Japanese curry), with a soft scrambled egg, on soba noodles or – our favourite – sandwiched between two pillowy slices of toasted shokupan; the slightly sweet, fluffy-as-a-cloud Japanese white bread we dream about at night.
