With Josh Niland and Joe Greenwood at the helm, breakfast at the Saint Peter Hotel is crafted with the same precision, skill and transformative ingredients as lunch and dinner at the restaurant downstairs.

“Breakfast to Julie and I is so important as it’s an opportunity to create a valuable, luxurious and thoughtful offering that is exclusive to hotel guests,” says Niland of his and wife/co-owner Julie’s approach to the meal. “It’s a way of extending the hospitality beyond the rooms.”

Served in the sharp Saint Peter bar space, the breakfast menu reads like a love letter to Australia’s finest produce. Though curated daily around what’s in season, the current menu kicks off with a selection of fruit so fresh they feel as though they were picked minutes ago. Then there’s the plate of marron scrambled eggs that exemplifies Saint Peter’s ‘fin to gil’ ethos: butter is steeped with marron shells then crafted into a rich, shellfish hollandaise served from the marron’s head alongside the poached marron meat and perfectly glossy, golden scrambled eggs.

“It’s a labour of love,” Niland says of the dish, “but we wouldn’t have it any other way.”

The breakfast experience closes with a freshly baked pastry (a shiny grape and hazelnut financier is on the opening menu), paired with single-origin Columbian coffee roasted for the venue by Stitch Coffee in Alexandria.

“It really sets the tone for the rest of the day,” Niland says, “and leaves you with a lasting memory of your entire experience.”

The Saint Peter hotel’s approach to breakfast is part of a growing trend in Sydney, where boutique overnighters are elevating the morning meal to a premium, destination-worthy experience. Bar Julius, inside brand new The Eve hotel in Redfern, offers a creative spin on breakfast that includes a taramasalata bagel, croissant ice cream affogato and Oscietra caviar.

Meanwhile, in Newtown, the suites soon to open above Continental Deli and its three new sister restaurants on Australia Street will allow overnight guests the easiest post-meal commute imaginable.
