Hospo king Josh Rivers combines Diamond Burger and CREAM under one roof at Brighton

One of Adelaide’s most adventurous cafe and hospo names is preparing to take on a new challenge – combining two of his ventures under the same roof.

Beloved beachside haunt CREAM will whip up more than coffee and brunch from next week, as the new home of Diamond Burger.

The hospitality projects – which are both owned by industry heavyweight Josh Rivers and his pregnant wife Chimere – will come together under one roof from Friday (January 31).

Mr Rivers also operates Landough’s in Brighton and Australia’s first Chicago deep-dish pizza restaurant, Remy’s Deep Dish Pizza and Bar, in the city.

He said between his four businesses, he often worked 100-hour weeks – so centralising them “just makes sense”.

“Wifey and I have decided to move Diamond Burger into CREAM’s venue on Jetty Rd Brighton,” he said.

“We have another baby due in less than 10 weeks and we need to pull back our workload and having a location in Glenunga stretches us way too thin.

“Combining three business across two locations just make so much sense, on so many levels for us.

“It’s just what’s best for our family.”

The couple are already parents to two-and-a-half year-old son – and Landough’s namesake – Lando.

Mr Rivers, 34, said the venue would trade as CREAM from 8am to 2.30pm, before it is “reset” as Diamond Burger each day from 4.30pm.

He hoped the venture would bring new “energy” to the beachside strip after dark.

“Brighton is a very good suburb and the locals have always supported us.

“Pre-Covid, there were hardly any places doing dinner – there wasn’t even street lighting.

“Now, there’s more night-time establishments.”

Customers from both businesses were quick to praise the decision, flooding social media with comments.

“As a Brighton dweller, I am stoked about this. We need more evening eating spots on Jetty Rd,” one person wrote on the Diamond Burger Facebook page.

“We’ve been wanting to go for ages, now they are moving … we’ll definitely have to go soon,” said another.

“For us southerners it’s a big win,” one commented on CREAM’s Instagram.

Meanwhile, eastern suburbs locals bid a fond farewell to the all-American diner.

“Ah well, was good while it lasted … best wishes to you all,” wrote one customer.

“Sad, but family always comes first,” said another.

Diamond Burger opened on Portrush Rd in 2023 and quickly built a name for itself on the east side of Adelaide for their humungous smash burgers.

Mr Rivers said the fully-fitted and “very versatile” restaurant space would now be available for sale.

He encouraged people who are thinking about getting into hospitality to contact him.

“There’s still heaps of business models that work in this climate,” he said.

“But you need to be savvy with your numbers and you need to consider your labour bill.”
