C.R.E.A.M to transform into an American diner come summer

American burgers, fried chicken and the coldest soft serve in South Australia will be on the menu at the revamped C.R.E.A.M in Brighton

Gourmet beef burgers, fried chicken and the coldest soft serve you’ve ever eaten will be on the menu when Brighton’s C.R.E.A.M opens for dinner in a few weeks.

The popular brunch and coffee haunt has doubled the size of its kitchen and smashed into the adjacent shop space to cater for more diners.

Josh Rivers, who owns and built the cafe with his dad, Damon, became inspired to bring a “full American diner” to the beachside suburb following an eating trip to the US.

“There’ll be lots of fried chicken, high-end beef burgers, shakes and soft serves,” Josh says. “We bought a machine from a WA business called Riva, which churns real ice cream. Soft serve is -5C; this is -14C. It will be the first in Australia to use this Riva ice cream and blend coffee with it.”

The iced coffee won’t be the only thing unique to the cafe. They have invested in a $12,000 Ubermilk machine, which steams the correct amount of milk on demand.

“It reduces wastage and labour time,” says Josh, assuring the texture of the milk remains the same. “It eliminates the need for us to stand there, steaming milk.”

While dinner trade is still a few weeks away, the cafe will continue to serve brunch-goers by day.

It’ll shut up shop as usual at 4pm, then reopen as an American diner. “We’ll do dinners seven nights in summer,” Josh says. “We’ll do desserts as well, like a traditional American peach cobbler and affogato.”

C.R.E.A.M’s extension has been a labour of love for the father-son duo, restoring 100-year-old features within the heritage building.

“In 1910 it was a butcher; his home was C.R.E.A.M,” Josh says. “There are white tiles and a big slope in the shop floor, because then there was no abattoir. We’ve revived those tiles and they look stunning now.

“100-year-old oil-filled door closes, Venetian windows – they were completely neglected as well.”

Among the new features is a second coffee bar dedicated to speedy takeaways, and booth seating. “The fit out is amazing,” Josh says.
