Fabbrica team to open pasta and wine bar at Balmain's Exchange Hotel
Slick CBD pasta shop Fabbrica is opening a spin-off pasta and wine bar at Balmain's Exchange Hotel. With a late February launch, it's a pop-up with a long expiry date, trading until the end of 2023.
Fabbrica, owned by the Love Tilly Group and stocked with handmade pasta and sourdough, will add another string to its bow in Balmain, mining the menu of Fabbrica sibling Ragazzi Wine and Pasta.
Ragazzi's signature spaghetti cacio e pepe will make the journey across the Anzac Bridge, joined by dishes such as mafaldine with 'nduja, and tonnarelli with sea urchin, chilli and garlic.
Love Tilly Group co-owner Matt Swieboda will pull together a wine list drawing on Italian and Australian-grown Italian varieties, while Studio Vista's Sarah Watt has designed the 40-seat bar in the heritage-listed pub.
It isn't Love Tilly Group's first venture with the owners of the Exchange Hotel. They opened La Salut in The Norfolk Hotel in 2021.
