Chef Cory Campbell joins Barangaroo House with Matt Moran
The secret is out on the Matt Moran-led Solotel mega venue at Barangaroo. The multi-level Barangaroo House will open in December with former Noma and Vue de Monde talent Cory Campbell signing on as head chef.
"Cory is the head chef and I'm the restaurateur," says Moran. "He's unbelievable – one of the smartest chefs I've met. You can see the Noma in him. That simplicity and use of great produce."
While the soon-to-open venue touts itself as the "new capital of contemporary Australian cuisine", Moran says he isn't setting out to create a three-hat restaurant with Campbell.
"It's not going to be fine dining, but it's not going to be bistro either. We're going to use the best of everything."
Campbell is a significant score for the Solotel venture. A former head chef at the award-winning Vue de monde in Melbourne, he has also worked with Rene Redzepi at Noma in Copenhagen.
"It was a fantastic experience – the drive, the passion, the thinking – and something that I try to base my own cooking on," Campbell has previously said of the Noma experience.
Solotel hospitality group (which owns pubs such as the Golden Sheaf and Newtown's Courthouse Hotel) merged with five Matt Moran restaurants and an events business last year. The massive Barangaroo bar and restaurant is its most eagerly awaited venture of 2017.
