Burch & Purchese spin-off dessert bar opens inside 12-Micron restaurant in Barangaroo, Sydney
MasterChef dessert king Reynold Poernomo opened one in Chippendale, now one of Melbourne's hot young chefs and his pastry chef mate are doing the same in Barangaroo. Sweet tooths can rejoice, another dessert bar is rolling into town.
Justin Wise (The Age Good Food Guide Young Chef of the Year 2009) is executive chef at the 230-seat contemporary Australian restaurant, 12-Micron, which opens its doors in Barangaroo on Wednesday.
Following on the heels of Poernomo's pioneering Koi in Chippendale, Wise has tucked a 64-seat dessert bar into the 12-Micron restaurant space.
"I really wanted to offer different experiences under the same roof," Wise says
Wise worked with talented pastry chef Darren Purchese earlier in their careers at The Press Club before Purchese opened Burch & Purchese Sweet Studio in South Yarra.
"At 12-Micron we will turn some of our cakes from the Studio – including his coconut, passionfruit, ginger and mint creation – into plated desserts. Every single component has been taken and reworked," Purchese tells Good Food.
As well as the a la carte dessert menu, the pastry chef has designed three-, five- and seven-course tasting menus. "I really think Sydney is ready for it," he says.
