All-star team behind Darlinghurst's incoming A.P. Bakery revealed

The mysterious A.P. Bakery has been turning the throttle on its upcoming launch, with glimpses of edibles beginning to appear on social media in recent weeks.

Now it has been revealed the Darlinghurst bakery – which opens at 32 Burton Street in March – is a co-production from Mat Lindsay (Ester, Poly), Russell Beard (Reuben Hills, Paramount Coffee Project), Ping Jin Ng (Paramount House Hotel) and baker Dougal Muffet.

With its seasoned ensemble, no prizes for guessing the Burton Street bakery will have a cafe attached. So, you can sip on a coffee with your Vegemite and asiago scroll or buckwheat pain au chocolate.

According to the A.P. crew, the bread will be made using grains milled daily through a New American stone mill. Muffet will use lesser-known varietals of corn and old-world wheat seed supplied by the Australian Gene Bank. Sounds promising.
