WILL Mure has pleaded with locals to give his flagship restaurant Mures Upper Deck another chance after a scathing review by influential critic John Lethlean.

In last weekend’s Weekend Australian Magazine Lethlean labelled the prominent tourist venue a “restaurant dinosaur” and rated it one out of five.

The service was attacked as “less than indifferent” and the food “an expensive form of pub grub”.

Lethlean said Mures had a “responsibility to the community” in return for the prime waterfront land it occupies.

It is a major blow to Mr Mure, who with wife Jude, has been attempting to give the Upper Deck a fine dining makeover since taking over from his sister two years ago.

“We recognise the issues the critic has come across but it’s heart wrenching when you put in so much time and effort,” Mr Mure said.

“We only took over a couple of years ago and we have a plan, it’s a five-year plan.

“We are in the process of putting strict front-of-house training in place and we are slowly but surely changing the menu,” he said.

Mr Mure said staff turnover had been a big problem, but the restaurant had recently employed a front-of-house manager who they believed capable of lifting service levels.

“We want people watching us evolve into a brilliant Tasmanian seafood restaurant,” Mr Mure said.
