Move over, lemonade: this drink makes even fluffier high-rise scones

Hint: It’s our favourite 5pm beverage.

For decades, we spent hours (minutes really, but it feels like hours) tirelessly rubbing flour and butter together to make scones. Kneading scone dough was a terrifying task, because we’d always go a knead too far and end up with tough, flat scones. 

Scones were our arch nemesis. 

Then came along the lemonade scone – the scone to solve all scone-related problems. 

A simple bottle of lemonade removed all the hard work from making scones – the bubbles in lemonade help to aerate the dough to create light and fluffy scones. Lemonade scones are way more foolproof than regular scones, plus the lemonade adds a touch of sweetness that goes perfectly with cream and lemon curd. 

However, after noticing a comment made by one of our members, detailing that they had swapped out lemonade for Prosecco in their scone dough, taste.com.au’s senior producer Marina had to give it a go.

The results: perfectly fluffy, high-rise scones (and we promise it’s not the Prosecco talking). 

Let’s toast to Prosecco scones

Our love for Prosecco is strong. We love it in a spritz, in jelly, with pasta and now in… scones! 

Instead of lemonade, we used Prosecco, alongside flour and cream to make scones. The Prosecco works in the same way as the lemonade, giving the scones a fluffy texture without all the faff of rubbing together butter and flour (and making sure not to overmix the dough). 

And, since scones and Prosecco are a match made in high tea heaven, don’t forget to include these scones on any high tea spread.
