How to make DIY Lattice biscuits from SAO biscuits

The Aussie favourite might have been discontinued, but we know how to cheat-make it.

After Arnott’s announced they would no longer be making their iconic Lattice biscuits, we knew we had to find a worthy alternative. With their signature sugary coating, lattice biscuits are perfect for cheesecake and custard slice recipes. But could any other bikkie fill the void? Not quite, but we’ve found a nifty workaround.

How to make DIY Lattice biscuits

Enter recipe developer Tiffany Page, who made it her mission to find a way to recreate the humble Lattice biscuit with minimal effort.

Tiffany says: “The essence of the Lattice biscuits is in that deliciously salty and sweet finish. Arnott’s SAOs are the perfect texture to use as a substitute, but they lack the sweetness. So I decided to make a simple sugar syrup to brush over the top.”

To make the sugar syrup, all you have to do is boil sugar and water together in a saucepan until the sugar starts to caramelise. Then simply brush the syrup over the top of a SAO cracker and leave to harden.

Homemade Lattice bikkies: a TikTok favourite

When we posted the video of Tiffany’s clever hack on TikTok, the crowd went wild – mainly because they were outraged to discover that the biscuits had been discontinued. 50k views later, we can safely say we’ve spread the word… and our many Lattice-containing recipes are safe.

Tiffany says: “These great substitute biscuits work in any recipe that calls for Lattice biscuits, but they are about 10mm bigger than our beloved Lattice biscuits, so they might need to be trimmed for some recipes.”
