If there’s one thing that excites the taste.com.au team more than the promise of a wedding in the Ton, it’s the variety of spectacular foods that are served up at high-tea parties and balls! 

The taste.com.au office has been abuzz with excitement following the release of parts 1 and 2 of ‘Bridgerton’ season 3, which left us compelled to share the dishes that we would serve the most esteemed members of the Ton.

What would the taste.com.au team serve to members of the Ton?

The team’s Social and Multimedia Manager, Jade Dunn, has found the turn that high tea has taken this season to be most delightful. 

She has declared: “Gone are the days of predictable cucumber sandwiches and stale pastries. In their place, a newcomer has arrived, causing quite a stir amongst the Ton – the curried chicken sandwich (no crusts for Queen Charlotte, of course).”

This recipe is essential for a luncheon fit for high society, though it tastes just as delicious when packed in lunchboxes or enjoyed on a picnic. 

Recipes Editor and Food Writer Sonya Gellert also has Queen Charlotte in mind.

She explains: “While I’m tempted to pull out my retro jelly mould (did you spot the colourful jelly creations served up at the Ton’s balls and weddings this season?), we all know our hard-to-please queen loves a little flattery. With that in mind, I’m serving Charlotte her namesake dessert. Our easy cheesecake Charlotte recipe is topped with a vibrant cherry jelly layer – a grand table-topper befitting a regal affair. And, just like the well-dressed guests of Brigerton’s events, we’re imbibing lemonade refreshments.”

Hear, hear! 

Senior Content and Social Video Producer Marina Karris can’t decide whether to bring a savoury mini quiche or a sweet cinnamon teacake, while Content Coordinator and Producer Xenia Taylor is all about the sweet things in Regency life.

She says: “Mine would definitely be melting moments.” 

The only thing that Xenia can’t decide on is whether to bring golden syrup melting moments with rum and buttercream or Baileys melting moments.

One thing’s for sure, the Ton have never shied away from a lavish food spread. Why not try both and see which recipe will be your ‘diamond’?

Elisa Pietrantonio, Food Editor, also has a sweet tooth. She would serve this stunning coconut fruit cup layered jelly or a spring-inspired cupcake bouquet, which reminds this author of the Bridgerton family colours.

Speaking of colours, Digital Editor Rebecca Nittolo also notes that while Penelope has left behind her signature yellow in season 3 she would still adore these Battenberg squares.

“A classic never goes out of style when it comes to cakes!” says Rebecca. 

Taste.com.au’s Digital Food Director, Amira Georgy, also celebrates a classic high tea recipe: the delicious vanilla macaron. Since the Bridgertons were fighting over macarons in part 2, these might be the favourite of the season! 

Amira also suggests a lavender champagne cocktail for an evening event. We’ll toast to that. 

High tea treats befitting Bridgerton with a taste.com.au twist

It wouldn’t be high tea at the taste.com.au office without one or two of our signature twists on a classic, though.

Digital Director Laura Simpson says that this cheese lovers’ bombe, which takes classic Mexican-inspired flavours, “is giving serious Regency vibes”. The rest of the team simply couldn’t agree more! 

Another incredibly innovative recipe that deserves to be the edible centrepiece of your event is this beautiful sandwich cake, which Food Director Michelle Southan believes takes a cucumber sandwich to the next level.

“It’s pretty and sophisticated; all becoming of a ladies high tea,” she adds.

As for me, gentle reader? Fortunately my tastes aren’t as shrouded in mystery as Lady Whistledown’s often are, and so I have to say that our best basic scones recipe would be my choice for a high tea. While some may assume scones are too simple for the likes of the Ton, we have to disagree. 

After all, as Lady Whistledown said in the first season, “Don’t judge a book by its cover.”
