WHAT IS IT? A two-piece system for sharpening your favourite kitchen knives.

WHY NOT JUST USE A PULL-THROUGH SHARPENER, OR A WHETSTONE? Well, pull-through sharpeners are a bit rubbish, and whetstones are a bit hard to use. The Horl 2 gives you a precise, constant grinding angle every time, no skill involved.

HOW? You lay your knife, sharp side up, against the magnetised block (angled at 15 degrees off vertical on one end, and 20 degrees off vertical on the other) to hold it securely in place on the work surface. Next, place the diamond grinding face of the cylindrical piece against the blade and roll it gently back and forth a few times. Then repeat on the other side of the knife.

SOUNDS A BIT COMPLICATED. It’s not, though. The point is that the knife is always at a constant angle relative to the grinding surface. No guesswork is involved.

I JUST SAW THE PRICE. CRIKEY! Yes, but this is aimed at serious knife-nerds with a collection of Japanese santokus or gyutos, or Damascus steel blades.

VERDICT: It’s ace! Just don’t slice a finger off.
