After a two-year hiatus, the 2022 Melbourne Night Noodle Markets return to Birrarung Marr from November 10 to 27. The event brings the electricity of Asia's hawker markets to the banks of the Yarra, delivering a sizzling taste of street food culture to the city.

Look forward to a pop-up beer garden, margaritas from a kombi van and a non-alcoholic cocktail bar, along with free dog treats served in a noodle box for fur babies. With a huge variety of stallholders and around 70 dishes to choose from, the only challenge is knowing where to start.

Here are the must-eats.

Mr Miyagi's Big Buns More than a quarter of a million people have visited Mr. Miyagi at the Night Noodle Markets over the last six years. In 2022, the Windsor-based favourite is introducing fluffy, filling bao burgers. Three are on offer, including chicken schnitty with kimchi tartare, pork katsu and crumbed mushroom with miso mayo. All come with waffle fries.

Demochi Donut's Mochi Doughnuts
What do you get when you cross Japanese mochi with a doughnut? Demochi, with a characteristic crunch on the outside and a unique chew. Created by a husband-and-wife team, the doughnuts come in traditional cinnamon and sugar or glazed with honey and sprinkled with 100s and 1000s.

Hoy Pinoy's Bistek Tagalog
Hoy Pinoy are doing what they do best at the Night Noodle Markets - cooking over fire. This year the pick is bistek tagalog. It's a traditional Filipino beef stew, but Hoy Pinoy's version sees beef rump cap smoked over charcoal, glazed with sticky citrus soy and served with white rice and onion.

Flying Noodle's Way of the Dragon
Cameras eats first when it comes to Flying Noodle. Each bowl is an optical illusion, with noodles suspended from chopsticks floating in mid-air. There are a few bowls to choose from, but for a flavour punch, order the pork belly slow cooked with honey soy and tamarind.

Wonderbao's Okonomiyaki Tofu Gua Bao
You don't have to be vegan to appreciate Wonderbao's okonomiyaki gua bao, inspired by the traditional Japanese pancake. A generous hunk of tofu is lightly fried and tossed in Japanese seasoning before being added to a signature bao bun with umami-packed pickle, okonomiyaki sauce, nori and vegan mayo.

Gelato Messina's HK French Toast
It doesn't get much more decadent than Messina's take on Hong Kong french toast. Two slices are filled with dulce de leche and peanut butter and coated in cornflakes for crunch. A scoop of maple syrup gelato goes on top, followed by a sprinkling of toasted peanuts and a generous stream of condensed milk.
