Rockwell and Sons becomes Falco Bakery

Casey Wall and Manu Potoi promised something different when they closed their popular Smith Street diner Rockwell and Sons in June. And they didn't lie. Rising in its place, quite literally, will be Falco Bakery, headed up by a former Tivoli Road and Tartine baker, Christine Tran.

Wall and Potoi, who also own Bar Liberty and pizza house Capitano with Michael Bascetta, say they wanted to try a daytime operation — since their other businesses are night owls — and one that serviced the community better.

Rockwell and Sons' greatest hits had become its ridiculous double patty smash burger featuring no salad (unless you count pickles), and Wall's fried chicken. But Wall says that "was quite polarising. The way people eat has changed since we opened seven years ago. This is a response to that evolution."

Along with sourdoughs and pastries, Tran will be creating cardamom buns and the bakery's own pies — including a double patty smash number as a hat tip to rural Aussie bakeries and Rockwell. Sandwiches will also star.

Wall is trialling a number including mortadella, provolone, and green olive relish on sourdough focaccia and a gun salad sandwich to which you can add meat. They are also working on an english muffin breakfast sandwich.

While much of the site has been commandeered for bread production, there are still 25 seats for eating in.

Opening date? Wall says "the oven is on a ship". But they are shooting for November.
