Reymond family to open Frederic and Fred's Bar in Cremorne

Frederic and Fred's Bar, the new two-pronged European precinct offering from Jacques Reymond's progeny, Antoine, Edouard and Nathalie​, is set to open in Cremorne later this month.

It's named for their late maternal grandfather, who was also in the hospitality game. "He was a cheeky character who loved good food and wine and appreciated the finer things in life," says Antoine Reymond. "This concept reminds us of him."

Chef Nick Deligiannis is on board as head chef of both venues. Deligiannis completed his apprenticeship with the Reymond siblings at another of their restaurants, Bistro Gitan, and has since worked at London restaurants the Glasshouse and Pollen Street Social, plus Fitzroy North's the Recreation and most recently Petit Tracteur on the Mornington Peninsula.

Frederic is the more formal of the pair. The 70-seat bistro will offer a range of steaks plus dishes such as octopus with black garlic mayonnaise, pork terrine, and salads such as asparagus with hazelnuts and smoked goat's cheese.

The food at neighbouring Fred's Bar will be simpler – pastries and coffee from 7am to 11.30am daily, then lunch dishes such as a seasonal quiche and salad, fried rockling baguette or minute steak.

The fitout by SJB Interiors (which worked with the Reymonds on both Bistro Gitan and L'Hotel Gitan) is slightly industrial, with concrete rendered walls and an exposed ceiling softened by timber, marble, antique mirrors and feature tiles. A 12-metre bar runs the length of Fred's Bar, and both spaces feature banquettes and intimate, European-style tables.

Frederic will open daily from 11am-3pm, 5pm-late. Fred's Bar will open daily from 7am-11.30pm.
