Felix Goodwin Gluten Free
The Windsor Hotel's executive pastry chef, Felix Goodwin (ex Sunda, Saigon Sally, Donovans), is on a mission to make hard-to-find gluten-free baked goods with the same flavour and texture as regular pastries. It's not just a side project – Goodwin is coeliac himself. The winners of his quest so far are his delicately rum-scented vanilla caneles.

To Be Frank
Since opening in December, Collingwood's To Be Frank bakery has gained a following for its long-ferment, minimal-yeast loaves and French-style pastries made with organic flour. Co-owner Franco Villalva has drawn on his Argentinian roots to create a laminated dough filled with dulce de leche (caramelised milk). Open Wed-Sun 7.30am-3pm.

Cobb Lane
Matt Forbes closed his Yarraville bakery-cafe Cobb Lane in 2018 to focus on wholesale. But with orders down during the pandemic, Forbes has opened a pop-up shop at his new bakery, selling his much-loved filled doughnuts, pastries and bread, along with flour, free-range eggs and Pepe Saya butter. Pre-orders and delivery available through the website. Open Fri-Sun 7am-noon.

Phillippa's Bakery, Brighton
After 15 years, Phillippa's Brighton bakery is moving a few doors down Hampton Street. With a larger production area in its new home, it should have no trouble keeping locals supplied with Swedish buns, almond croissants and organic sourdoughs. The move is expected in the next fortnight, COVID-willing.

Wonder Pies pop-up
Former fine dining chef Raymond Capadi, from Bulleen-based business Wonder Pies, opens a pop-up shop in Swan Street this week, selling things like chunky beef and lamb and rosemary pies, carrots and mash, eggplant lasagne, and over-sized meringues to go. Next door, Ugly Duckling bar has takeaway bottled cocktails, discounted for Wonder Pies customers.
