Chef Rob Kabboord quits three-hat restaurant Quay

Just a week after Bridge Room announced it will close at the end of the month, more bad news for Sydney's embattled pointy end of dining.

Talented chef Rob Kabboord has quit Sydney three-hatter Quay.

In 2015 the Dutch-born Kabboord left his Melbourne restaurant, Merricote, to join Quay as chef de cuisine. He plans to return to Victoria.

"I agreed to help Pete [Gilmore] out for a year or two but it stretched out to almost four years."

Kabboord will have a break before deciding whether to start a business or find another job. "There's not much better in Australia than Quay."

Quay's two senior sous chefs, Tim Mifsud and Troy Crisante, will step into Kabboord's clogs. "The kitchen's in safe hands."
