Charlie Carrington, the young gun behind globe-hopping restaurant Atlas where the menu changes regions every few months, has tweaked the concept of Colours by Atlas, his casual lunchtime spin-off, which opened in February.

Originally Carrington was serving bowls inspired by all the countries Atlas had covered so far – Mexico, Israel, Vietnam.

But as they work exclusively with organic suppliers, who can't guarantee what will be in supply, Carrington decided to offer straight mod-Israeli, which can flex with whatever lands from the farm.

Now, huge displays of beet, quinoa and cauliflower-filled salads cover the bench along with fresh, puffy pita and deep dishes of hummus.

Load a plate or tray with salads and pitas only or add daily specials like lamb meatballs or roast chicken.

Carrington says more cold meat options will be coming soon and there will also be Israeli breakfast. It's cash only and there's no toilet on premises, but there are phone chargers aplenty.

Meanwhile, a few doors up Commercial Road at Atlas HQ, Carrington has just dropped the all new French menu involving his take on onion soup, burnt leek and ocean trout terrine with hollandaise, lamb a few ways with jerusalem artichokes dauphinoise-style and a dessert by Glace's Christy Tania.
