Dan Pepperell, Andy Tyson and Michael Clift's hot-ticket Bistrot 916 has opened its doors, dishing up a slice of Paris in Potts Point.

Chef Pepperell (of Restaurant Hubert and Alberto's Lounge fame) has been limbering up with a line-up of steak au poivre, duck frites and oysters.

But he and his gun team of Clift (ex-Rockpool) and Tyson (former Hubert sommelier), have given a nod to the prominent site's previous occupant, the Dan Hong-led Asian-inspired Lotus. Boudin noir spring rolls? Yes, please.

From the elegant light fittings to the classic chairs and cloth-covered tables, Bistrot 916 has the timeless look of a restaurant stayer. It's a promising start for an industry hopeful that 2021 will prove a superior vintage to the one that preceded it.
