Just open: Pastuso
Ask someone what they know about Peru and they'll likely answer ''Machu Picchu''. But influential chef Gaston Acurio Jaramillo has given travellers another reason to visit - the food.
His countryman Alejandro Saravia (ex-Morena, Sydney) hopes to continue Peru's food PR push from Melbourne. He's teamed up with the San Telmo crew on Pastuso, a Peruvian grill, cevicheria and pisco bar at the end of ACDC Lane.
Chicha (Peruvian art posters) add a dash of colour to the timber and marble-heavy fitout.
Saravia is serving Peru's best-known dish, ceviche, in several guises (there's even a vego version of the lime-cured fish dish, using daikon), along with grilled meats, such as alpaca ribs, and tres leches cake. No guinea pig on the menu yet, but never say never.
