Terry Wilkins has plenty of tricks up his sleeve, including award-winning recipes for his BBQ Sausages and Outback Burger patties.
The butcher of 37 years, who is on a first-name basis with the majority of Fannie Bay residents, is celebrating his third year of winning acclaim for his gourmet meats.
The awards sponsored by Charles Darwin University, Master Butchers Co-operative Ltd, Meat & Livestock Australia and Australian Butchers’ Guild awarded Mr Wilkins with NT Best Beef Burger and NT Best Sausage.
Like an artist, the chopping block is Mr Wilkins blank canvas and Fannie Bay Gourmet Meats is his studio.
Mr Wilkins entered three products from his neighbourhood butcher shop which sits in the heart of the suburb.
“We won two, so to win two out of three I’m pretty happy,” Mr Wilkins said.
“The BBQ Sausage realistically, without downplaying it, is pretty simple because it’s traditional you can’t enhance the flavour,” Mr Wilkins said.
“But the gourmet Outback Burger we came up with a few years ago uses fresh vegetables, good quality trim and herbs and spices in it but it’s not overpowering.”
Mr Wilkins and his wife Bronwyn have been supplying the Top End with quality products for 13 years.
In 2019, he won Best Gourmet Lamb Burger and last year, his iconic laksa inspired chicken sausage won the People’s Choice Award.
