IMPORTANT THINGS TO LOOK FOR WHEN BUYING A NON-STICK FRYING PAN

Functionality

“While most of the time you’ll be using your non-stick frying just on the stove top, it’s good to have the option to transfer it to the oven or grill. You may want to use it for a frittata that you start off on the stove top and then finish under the grill, or when cooking a thick piece of meat, like a chicken breast, and want to sear it on both sides and then roast in the oven. Non-stick frying pans come with the warning to not cook at temperatures over 260 degrees celsius, but this isn’t an issue as ovens are rarely capable of achieving such a high heat,” Alison said.

Material

“There are two main forms of non-stick pans. The most common have a coating known as PTFE, which people often refer to as Teflon, as they were the first brand to use this technology. The other is referred to as ceramic although it actually has a silicon-based coating,” Alison explained.

“PTFE had a bad rap a while back as it was rumoured to be toxic. This has been completely debunked and there is no scientific truth to back it up. Both surfaces work well to prevent food from sticking. Ceramic pans are a bit more expensive though and generally don’t last as long as the PTFE ones,” she added.

Handle

The handle might be the last thing on your mind when choosing a pan but it’s actually an important feature to consider.

“What is ergonomic for one person may not be for the next. Most frying pan handles are made from a thermoset polymer which allows them to be moulded into shape and then able to withstand high temperatures,” Alison said.

“Make sure the handle doesn’t jiggle. You want to know that you can easily shake, flip or even just move the frying pan from one hotplate to the next.”

Size

The size you buy depends entirely on who you are as a cook and how many people you’re feeding.

“Both 24cm and 26cm are popular sizes as these settle nicely on the hob and are the perfect size for scrambled or fried eggs or an omelette,” Alison suggested.

“I also use my 24cm non-stick frying pan for cheesy toasties and quesadillas as any cheese that oozes from them doesn’t get cooked onto the surface. These are the perfect size for sitting neatly on the hob. I use my 30cm non-stick pan for browning off big batches of meat before transferring to the slow cooker or for shallow-frying crumbed chicken schnitzels – you don’t want any of that crispy coating getting stuck to the pan.”

ARE NON-STICK FRYING PANS WORTH THE MONEY?

If you’re a beginner in the kitchen, or are a bit of a lazy cook and cleaner, non-stick frying pans are a great option.

They’re easy to use and easy to clean. The unique coating ensures you use less cooking oil and leftover food doesn’t get stuck to the sides of the pan. It is recommend to use a low to moderate heat when cooking with non-stick.

HOW DO I CARE FOR A NON-STICK FRYING PAN?

Like everything else you own, it’s important to look after your non-stick frying pan to increase its longevity.

“Never use a scouring pad on a non-stick surface, instead use warm water, dishwashing detergent and a sponge,” Alison recommended.

“Likewise, don’t use metal implements when stirring. Wooden or silicon is the way to go. Another tip, never heat your non-stick frying pan without oil in it and although some brands say their pans are dishwasher safe, it’s best to hand wash.”

EXPERT RECOMMENDATION FOR NON-STICK FRYING PANS

It’s no secret that there is a wide range of brands out there and while non-stick frying pans aren’t forever items, Alison says that it’s about “finding the sweet spot where cost and longevity crossover.”

“Paying a bit more for a brand that you love and will last a bit longer is as valid as accepting it won’t last forever and buying the cheapest available. It’s a personal choice,” she explained.

“I like the Le Creuset toughened non-stick frying pan or the All-Clad, both of which are on the higher end of pricing. I can honestly say, however, that I’ve been happy with my Tefal. I’ve had it way longer than its expected life span and its non-stick properties are perfectly intact.”
